Antioxidant Activity on Soybean Tempe and Gembus Tempe

Abstract


Soybean tempe and gembus tempe are traditional foods has been known in Indonesia, which are developed into functional food. The various studies on the antioxidant activity of soybean tempe and gembus tempe were widely carried out on a laboratory basis. The aim of this study was to determine the antioxidant activity of soybean tempe and gembus tempe. The results of the research are expected to be an evaluation of soybean tempe and gembus tempe quality available in the market. The research method used a cross-sectional study by taken samples 31 soybean tempe and 29 gembus tempe. The sampling technique was simple random sampling. The measurement of antioxidant activity carried out the DPPH method by ethanol extraction of 95%. The results revealed that the antioxidant activity of gembus tempe was (32.521; 19.831), higher than soybean tempe (17.016; 13.195). The statistical test by the t-test showed that there was a significant difference in antioxidant activity on soybean tempe and gembus tempe.
